Celerity does add good texture/crunchiness to certain salads, but other than that OP is correct
 
I used to live with this old vietnamese lady, she'd cook me delicious food all the time and sit there and watch me eat it. Was a really sweet gig, till one day, extremely sick from alchohol and benzo withdrawal she called me to the table and fed me a soup that was filled with pieces of meat that were like part of a spinal column or something. Like meat around bone that looked like spine. It looked brutal as hell like shed just dismembered the animal 5 min before.The whole dish smelled rancid. Like putrid like rotting body or some shit. I was already so sick from the withdrawal Id have had a hard time eating my favorite food, let alone this carnage in front of me. She sat there and stared at me while I struggled through it. You can never say no to an old vietnamese lady when she serves you food. That was the worst thing I ever ate. Whatever that soup was, that can go on the list.

Celery is OK because you can add it in small quantities to all kinds of things and it'll improve them. Something like broccoli is way worse in my opinion. It's not a dish enhancer. When you're eating broccoli it's because you really set out to eat broccoli. Tells you something that the average person has to slather it in like 1000 calories of cheese and cream sauce to even tolerate it.
 
Mirepoix is in like everything.

I basically never eat straight celery, but cook with it often.


But I think Swedes could disappear from this world and almost no one would notice.

celery is awesome especially Chinese celery one of my favorite dishes was a home cooked dish my old boss would make
Chinese celery with Nathan hot dogs chopped up and stir fried. mix it with chilis or lao gan ma was great eating

one thing I have a hard time jiving with is foie gras. I don't get it
 
Bay leaves. Who are we trying to fool? Thats just a twiggy leaf.
Can't make a good Bechamel without a bay leaf. Which I've talked myself into making a lasagne today. I do love a good Bechamel so it'll be worth the effort.

Have you had it? I swore off it for ethical reasons. Unless I'm in Vegas. All bets are off then, not that I seek it out but if it's on the menu with something else delicious I'm all over it.
 
Oh and guess what's going into my Lasagne today? Celery.
