Sapp vs Fujita
At the time Fedor vs Nog 1 was an absolute shock to everyone.
David Terrell had a lot of hype after one-punching Lindland but Tanner owned his ass for the strap
Penn vs Hughes 1 was insane
Royce vs Yoshida 2 was a draw but obviously Royce whipped his ass

But the most shocked I ever was at a complete domination was Shogun vs Rampage
 
For me it was Bigfoot vs Fedor.

Maia/Fitch springs to mind. Fitch was still in his prime and an elite grappler. Maia ragdolled him. The Gunnar Nelson fight too.

Speaking of ragdolling - Khabib/Trujillo. Khabib hadn't beaten anyone of note at that point and Trujillo had just out-wrestled and brutalized a 4-time NCAA DIII champ (155-0). Never expected what was to come (regardless of how you judge takedowns vs mat returns 😜)

Barao was the boogie man at 135 then TJ stepped in on relatively short notice (?) and made the Brazilian look like an amateur.
Not sure how many were betting that the Californian would take that one.

I expected JBJ to win; but not completely dismantle and destroy Shogun.

Off top of my head Big Timmy and Couture.

Couture is in his 40s, gets KO at LWH twice by Chuck, retires and then moves up to HW being undersized at 223lbs against 23-2 HW champ that is 6'8 263lbs.
I called that one (stylistically) when Silvia fought Monson.
I thought that Couture’s Greco-Roman (or someone’s solid Judo) world get it done with trips/throws from the clinch.

Didn’t think that The Natural would drop the maniac with one punch, though.

Roxanne dominated, Alexa would beat her also by a close decision. It was one of the biggest feel good moments in the sport. Roxanne is seriously one of the sweetest people ever and this was a culmination of her career

Fights where you were absolutely convinced a fighter would win, and they wind up getting dominated?

And by dominate, let's exclude one-punch flukes or even quick submissions. Anyone can get caught by those. But we're talking about several rounds of just stuffing your opponents attacks, making them look helpless.

For me it was Bigfoot vs Fedor.

That’s a good call.
We’d seen him stifled by caveman/carpenter; but I imagine that quite a few chalked that up to octagon jitters and the fact that it was a 3 round fight (although I’d have to go back and rewatch to determine how much of a factor the latter had been.)

To see him completely shut down and out worked on the feet like that was super surprising.
 
Strickland vs Izzy was hard to foresee. I knew strickland would do better than whittaker and I gave him a chance to win a decision but I didn't think he'd make it look so easy.
