I used to be heavily interested in powerlifting (still lift but I consider powerlifting boring nowadays) and whatnot and my perception is that it's solid. Not insanely strong, but very solid for a non lifter.Is this impressive for a fighter? This feels kind run of the mill weight.

This variation is easier because the other hand doesn't stay up. Just try it at the gym tomorrow. Arthur Beterbiev does the same thing but he doesn't rest the db on his chest.
This is probably the hardest variation. This dude is also using circus dumbbells. I don't know why but some standard commercial gym DBs in America are bigger and not ergonomic.

There is no way in hell a guy with his strength level is visibly struggling with 25 kg dumbbells. GSP was lifting 120 lbs at one point. 110 lb db presses is an intermediate lift at his weight lol. I guess it's only impressive if you don't actually lift weights for any amount of appreciable time
I'm glad he's lifting tho. A lot of mma fighters and their coaches have BS theories about strength training. Ie it makes you slow, inflexible and doesn't help much in MMA. Even GSP was convinced not to lift weights anymore. Islam coach has said the same thing. I disagree with them. Look at Jon Jones.

It isn't exactly a pause rep. He is keeping that dumbbell down as a counter weight. It allows him to be stable enough to press the weight. He doesn't have the strength to press it up if his other hand was up. Seriously go try it in a gym. You have to take into account that he's alternating wich make it harder to balance, and also, each rep is done from a dead stop, not taking advantage of the stretch reflex.
I've never done this alternating shit, but you have to take into account that in the video you linked the guy is taking advantage of the stretch reflex on each rep. Doing it like Khamzat from a dead stop requires more explosive power, while holding it at the top and using the stretch reflex probably requires more stamina.
