.. he should be upset and angry and assertive that he did not cheat. All this crying just doesn't make sense and seems to be caused by the realization that he fucked it all up again which is making him sad.

Also, he contradicted himself. First he said that he didn't change any supplements and later in the conference he said that he added couple of new things.

I still hope that he comes back to get his ass kicked by someone if not Cormier.

I'm paraphrasing from the press conference, but it was something like "I didn't cheat/take anything illegal, but I'd like to apologize" . I know the apology is for getting the bout canceled, but it still sounds funny.

Yeah but if you know you didn't cheat , then what are you taking responsibility for? I would be not apologetic but angry strongly claiming my innocence.
