I've been converted into an animated show fan

Jump straight to Cowboy Bebop. Even the music is great.

Also, some of the best animation ever, and it's 26 years old.

A lot of the Studio Ghibli stuff is family friendly, but several of the films are truly great stuff that can compete with live action.

Arcane is amazing. Blue Eye Samurai almost as good. Invincible is probably my top animated show.

(there are quite a few gundam series by the way)

Aqua Teen is not for everyone but if you can get into it, it is random and hilarious. Carl might be one of the best secondary characters in an animated show.

I have seen people crap on this show because it is so random but this show is so good and it has one of the best heartwarming and yet sad endings of any animation show I have seen.

I would like to add a show I have not seen yet and it is dated but still holds up and that is Daria. It is an offset of Beavis & Butthead but is nothing like Beavis & Butthead. It has a good story throughout and just deals with being in high school in the 90's, and if you like sarcasm it has a lot of it there.

Regular Show is great b/c I could watch it with my 10 year old and still get some awesome laughs out of it for me and the characters were heartwarming like you said. There are a ton of throwbacks to the 80s and 90s as far as characters and references that my son didn't get but totally cracked me up. It's one of my favorite shows.
 
I got hooked during Covid. Here is what I have enjoyed besides what you have mentioned:

Seis Manos (Adult Animation-Mexican themed)
Sirius The Jaeger (Anime)
The Seven Deadly Sins (Anime)
The Dragon Prince (Skews young but very good)
Trese (Anime from Singapore)
Skull Island (Adult Animation, King Kong)

The DC Series on HBO MAX. Most are better than live action. We have Batman, Constantine, Superman, Justice League, Green Lantern, Aquaman, Teen Titans, Wonder Woman, Suicide Squad, Flash, all have movies. They all loosely follow a timeline so try to watch them in order if possible. Best is Flashpoint Paradox, Apocalypse War, Batman Mask of Phantasm, The Killing Joke, Dark Knight series.
