All I can find is her IFMA titles.

IFMA stands for International Federation of Muaythai Amateur.

Have I just got the complete wrong end of the stick here and female Muay Thai has no professional body?

I've found the World Professional Muaythai Federation which appears to have several male world champions, but I cannot appear to see any females. So how does this work exactly? Females only fight amateur Muay Thai but men fight professional? What is the difference, are there different sanctions or rules?

Valentina Shevchenko also seems to have a load of IFMA titles, but she also has a load of gold medals in KF-1 and K1 world championship events. Appears to be a whole different level of accolades here.

No professional (commercial) organisation has a legit champions. They are all bought and payed for. That being said money attracts better talent.

I Google'd Stephen Thompson's kickboxing records for a bout half an hour one day and found a bunch of bummy websites made by dorks which gave a rough outline on his point-karate fights.

A little embarrassing to lie so fervently.

The IFMA is the body recognized by the Thai government and the International Olympic Committee. It's competitions are amateur but open to professionals except for the top male stars at Lumpinee and Rajadamnern. Their tournaments have as many as 120 participating countries with many hundreds of competitors and basically involve the governments of the countries where they are held, much like other Olympic sports.

The professional body recognized by the Thai government is the World Muaythai Council (WMC). Both the IFMA and the WMC have both male and female champions. IFMA contests involve headguards, elbow pads and shinguards.

There are of course numerous other bodies and belts of varying prestige in kickboxing and Muaythai with varying rule sets, but outside of the bodies recognized by the Thai government it's just a mess.

There's no real boxrec/fightfinder on kickboxing so the records are pretty much the wild west.

So essentially Joanna was winning point-Muaythai, with little to no risk of injury.

Headguards, shinguards and elbow pads lol.

What the fuck is the point in that case?
 
Joanna had 46 amateur MT contests losing just 3 - all to Shevchenko in the IFMA world championships in 2006, 2007 and 2008.

Her Pro MT/kickboxing record was 29-4-1, the four defeats being to Dayergi Gozde in Istanbul, Amanda Kelly in Manchester, Vandarieva in Minsk and Rattanapundit in Bangkok. The draw was with Catarina Valerio in Lisbon.

Joanna was also runner-up in the Polish amateur boxing championships in 2012 losing to Sandra Kruk who went on to take the silver medal at the subsequent world championships. Joanna was actually selected to train with the Polish Olympic boxing team but passed it up to pursue MMA.

You don't need risk of injury to be good at something.

It's not difficult to analyze the skill level of someone with whatever type of competition they are facing and Joanna obviously has talent.
