I mean the UFC has an official back up in the event Stipe pulls out, in case Jon “could” accept it. Or Stipe if the roles are reversed.

There are variables to it. Like if someone pulls out a month or 3 weeks out, it’s different than 3 days. Longer time means higher chance they accept the fight.

They just have it as an option

That's a UFC decision, not a Jones decision. Chael was a backup fighter chosen by the UFC once, and Jones' decision was to run away for a few months.

Just because you call him your backup doesn't mean there's any contractual obligation to face him. You'd most likely have an entirely new bout agreement. Jones wouldn't have to sign it, just like he didn't have to face Sonnen as a late replacement.

There’s a difference between an official back up fighter that’s listed in the contract as a back up opponent— that makes weight at the official weigh in— and a guy they called at the last minute to fill in after one of the fighters already pulled out. Tom Aspinall made an entire YouTube vlog where he refused to drink alcohol until an hour before Jones and Stipe stepped into the cage. But it was complete radio silence on their end. But I guess we’re supposed to believe that was a coincidence right?

Again, if Stipe pulled out and Jones really didn't wanna fight Aspinall, Jones could then just "get injured while training" and the fight wouldn't happen. He had avenues to avoid fighting Aspinall even if Stipe did pull out.

He wouldn't even need to do that, just decline the fight like when he was meant to fight Chael and didn't want to "risk it" leading to UFC 151 getting cancelled.

Make no mistake, Aspinall was only the backup in case Jones pulled out lol. If Stipe pulled out that fight would’ve 100% been cancelled. JBJ wouldn’t take journeyman Chael on 2 weeks notice even when he was in his prime, ain’t no way he was taking Aspinall when he’s well past it.
