If Aspinall was a back up-fighter for Jones-Stipe, doesn't that prove Jones was willing to face him?

Probably counted on both him and Stipe being well paid for this one and counted on Stipe laid off a few years making it, no questions asked.

What am I missing here? I hate to defend Jones but how would he have gotten out of that one?

Calculated risk. Stipe had one last shot at a big payday. Jones knew Stipe would pretty much have to lose a limb in a freak accident to pull out.

And let's say Stipe did pull out a couple weeks before the fight...nothing stopping Jones from getting an injury while training a few days later that doesn't allow him to fight.

Still surprised nobody talks about this. the match could have happened as a replacement event.

Again, if Stipe pulled out and Jones really didn't wanna fight Aspinall, Jones could then just "get injured while training" and the fight wouldn't happen. He had avenues to avoid fighting Aspinall even if Stipe did pull out.

Jones didn’t have to accept the fight. They still have to make a formal offer that has to be accepted.

Look at what happened at UFC 151, Hendo pulled out and Jones declined Sonnen short notice.

Even if Tom was the back up, Jon doesn’t have to take the fight

Aha, but then what use is there to have Aspinall as a back-up? Jones doesnt accept it anyway. Did they mean Aspinall was primarily a back-up for jones?

Potentially? Which makes it even more the point that no, Aspinall being the backup did NOT mean Jones had any agreement to fight him in either a theoretical or practical sense.

In case Jon would accept. Or they get someone else. You had the same scenario a year prior with Pavlovich as the official back up. And we ended up with Tom vs Pav.
 
Just because you call him your backup doesn't mean there's any contractual obligation to face him. You'd most likely have an entirely new bout agreement. Jones wouldn't have to sign it, just like he didn't have to face Sonnen as a late replacement.
