Also, why does it have to be "over" everything?

You can't just order medium eggs, you have to say over medium.
because that is when they flip the egg.

To cook just one side is Sunny Side up and it is always under cooked it's an abortion and gross. Hard egg would be hard boiled. Over easy/medium/well just determines how runny you want the yolk to be.
 
Scrambled, but not soft or liquidy. The best scrambled eggs I've had were in some local diners or how my dad used to make them. I also love eggs benedict, which necessitates poached eggs.

Never cared for anything else, that didn't fully combine the whites and yolk.

Its all on chance, sometimes you get the egg with the “fetus” in its early stages where everything is soft and easily digestible, just add a little bit of salt and chili pepper flakes you’re good to go. And then you have the nightmare fuel with the bird, feathers, beak, soft-medium hardness of the bone, which is the one that created the stigma.

Back to the thread, over medium, and for scrambled also.
 
If I'm ordering and I don't have to do it I'll want Poached, Over Easy, or Sunny Side Up. If I'm the one doing it I'll usually just settle for soft-scrambled because it's easy and you can't mess it up. I also like soft-boiled, but hawking the timer and giving it the ice bath long enough that it peels easy but doesn't get cold is also a bitch.

Anything where the yolk isn't cooked, basically. Cooked yolks are disgusting (and less healthy).

So true. There's a big difference between an over easy (more appropriately named over light) and an over medium. Namely, the whites being cooked all the way. 😂

A properly cooked sunny side up is not undercooked. A badly cooked one? Absolutely.
 
It's just like with anything that gets too much heat, it cooks off some of the nutrients.
Right on, maybe "less nutritive" instead of "less healthy". Less healthy is seen as meaning "more unhealthy" so I thought maybe it changes the chemistry like when you over scorch fats and they turn into the worse fats type of thing

The cholesterol in the yolk is oxidized. Increases free radicals. Also, vitamins diminish with cooking. Conversely, cooking the protein is superior. Denatures the protein, makes it more digestible. Cooked egg white + uncooked yolk is the best way to eat an egg, nutritionally speaking.

I believe you can avoid that if you cook the eggs low and slow, which is the way you're supposed to cook them, so French omelette should be okay, but an American omelette (with the browned bottom) is not.
 
I watched a cooking show on NHK World on yakisoba and at one point the woman used something like soft boiled egg as an additional sauce for the noodles, as well as thinly cooked egg almost like a burrito of yakisoba inside.
