Because Dustin didn't have it locked in properly, and so Khabib extracted himself out using that opening.

He didn't have full guard. One leg was out. It would take a hell of a squeeze to get it and Dustin was already tired by that point.

The knee control was key, but he was being choked. The knee control allowed Khabib to take away Dustin's hip control which is all important. Dustin's real big miss what not transitioning to an Anaconda Choke when Khabib flopped over the 2nd time. It was right there and it would have been a wrap.
 
By passing Dustin's right knee and rolling to the side to loosen up the choke
 
He stayed relaxed and rolled out of the choke repeatedly. Obviously he was able to do it because of his vast experience on the ground.
 
It wasn't in deep, you could tell from the way Khabib's body language there was no danger on his part. He had just enough space to not be in any immediate danger. Also Dustin was tired, if it were the 1st round may have been a different story.
 
The UFC is literally filled with Olympian and World Championship grapplers.

I remember videos of Marcelo Garcia escaping guillotine chokes (but from his opponent's guard instead of half-guard) and he would jump to his hip the same kind of way.

I thought he was rolling to his back at first and was like noooo! Lol. But he bounced right back on top. Then again. By the third time I realized what he was doing. It was brilliant.

Not sure of the risk since that’s way beyond my level. It’s something I hope one of these Bjj guys does a breakdown on so I can learn it.

How do you defend from going to sleep? Dustin had that locked in tight until his arm couldn't squeeze anymore and khabib slipped out. How did he defend that? The fight could have been over right there if Khabib went to sleep

He leaned forward so that the top of his head was directly on the mat, which in that specific position was able to alleviate the pressure. Dustin had to readjust, and when he did it was even less locked in.
