Hiking where Grizzlies roam...

Sounds like you bearly made it out alive!

I live in major grizzly country and see them relatively frequently. They're a hell of a creature.
I always bring a couple of my dogs hiking with me, and most often I'll pack a gun too.
 
How is bear meat?
Never had that or elk.

I've had bear in a stew. My grandfather had a ton of pepper in it and it wasn't so great. Elk, on the other hand, is absolutely delicious.

With bear trim most of the fat.
I make sausage or burgers with mine and its delicious as hell, the grounds can also be fried up in coconut oil and added to a stuffed pepper.
 
I looked up on the inter webs and it’s 50/50.
Elk is pretty much unanimous delicious times.

Every person ive fed bear to has loved it. People cook wild game like they would domestic and thats where they run into issues.

Ftr, outnof all big game you can hunt in ontario, ive killed and ate more bear than deer or moose.

Elk is good but i prefer mule deer.

Good thing you had the machete. The bear could have used it to pick your gristle out of his teeth. You realize you're talking about an 800lb wrecking ball that can run 35mph, right? My brother in law has a place in Alaska and I saw one there. You wouldn't believe how quickly they can cover ground. It charged, but never came close to getting us. Still, that's the closest I've ever come to shitting my pants.

I make a standard honey garlic sausage or hot flavored.

If im making grounds for burger, i chop in 1lb of bacon per 10lbs of bear.

Can bbq or fry in coconut oil.

If you are stewing etc, i recommend trimming as much fat off the bear when you are gutting and quartering before hanging in cheese cloth.
Bears are omnivores and as such their fat tastes like shit. Much like a pig, pork chop fat isnt very tasty, but bacon is because its been smoked. By removing the fat and using another fat of choice for cooking, you wont find it anywhere near the same.
If you are roasting it, trim visible fat and roast on a tray so the drippings fall to the bottom.
Can use duck fat or beef fat to baste.

When I lived back east, I would take my deer to the butcher. I used to do it myself, then I got tired of doing it. I'd skin them out, and deliver them. Deer fat tastes like wax if I remember right, I would trim all of it off as best I could then have the butcher grind in 2% beef or pork fat.

Thats part of why i use bacon with bear after literally trimming it of all visible fat possible. I keep the fat for other purposes but for food its just a nasty tasting fat. The minimal amount thats left over is fine but if you had a bear t bone ...fuck lol gross.
