Help choosing kitchen knife set

Why do I get the feeling that I'm going to get yelled at? Anyway... what about ceramic knives? Or are some of the options listed ceramic?
 
I have a couple different Zwilling knives. The chef knife is a bit on the heavy duty side but it feels amazing to work with.
 
I bought a bunch of ScanPan knives last year. Great knives and supported my people too
 
Cutco in my honest opinion is overrated and overpriced and I detest the handles. I have a random assortment of shun knives, original series, the old shun pro single edged series, ken onion and new shun fuji. I prefer shun due to availability, balance and edge. In my opinion they are the sharpest, and most ascetically pleasing. The old single beveled shun nakiri knives I have are the sharpest knifes I own.

Global would be my second choice due to price and availability, but they are too light weight for me and can easily slip and take off my hand.

For Traditional western style knives, I like Misono. Western style with a japanese razor edge.


you mentioned hattori, these are incredible but cost a fortune.

I was very impressed by the Yoshi Blade TV commercials, but after reading about ceramic knives maybe being brittle and seeing it was made in China, no way I'm going to buy.
 
Got two Japanese handcrafted knives for christmas fucking awesome. Expensive but fuck are they sharp well worth the money.

I did this a full years back. I ordered one of these guys from japan woodworker.

Incredible piece, I almost hate using it. Incredibly sharp and balance is superb, although I had to wait for it to be made on back order and it took over a year till I received it.

looks very simliar to the one i got blade is abit different but the handle looks alike
Ya they are amazing. Holy shit a year well worth the wait tho.

I got the Calphalon Contemporary 21-piece set and then - because I am insanely OCD - I went out and bought all the other CC knives that weren't included. Altogether , it's like 26 pieces, and the block holds 24 of them:

My entire set cost me around $400-$500 in total, but seriously, I frikkin' LOVE my Calphalon Contemporary Cutlery Set. Those Global's look too... "Euro" to me, and the Shun are too expensive for my needs. (Or budget!)

Not to break your heart but I bought a same set on Amazon for under $200.

If yours is the EXACT same as the pic shown in your original post, then that's the Calphalon Simply Cutlery (it has the 3 steel "dots" on the handle), which is about right for the $200-$220.

My set, the one in the pic I posted, is Calphalon Contemporary Cutlery (no steel "dots") and is $299 for the 21-piece set (new) literally anywhere I've ever seen it - Calphalon.com, Amazon, BB&B, Macy's, etc. (The 17-piece set is $199.) I bought the 6 extra knives not included in the set separate to complete my Contemporary Cutlery set, which cost me the extra $100-$200: a 6" Chef knife, a 4.5" Parer knife, a 6.5" Sammich knife, a 6" Serrated Utility knife, and a cheese knife and spreader mini-set (the cheese set was free with other purchase).

New. Exactly like the photo I posted.
 
I tried my buddies Shun 6" chef's knife last night. It cut very well, but I think it was too light for my liking. While chopping I found it tried to "tip" on me for lack of better description. I think I need a heavier chef's knife, going to see if I can find a Wustof in my city. Matching sets don't mean shit to me, so I will probably be piecing together a 5 or 6 piece set of all different brands.
