not real high quality , but I have been looking for a new knife . I have heard some good things about a Fujiwara gyuto I've been looking at .

I use global as well. For the price, they were definitely the best knives available.

I have a set of Henckels knives and they are good knives, had them for about 4 years now and they've seen some abuse and held up well. I'd recommend them.

I think I'm going to go with either Shun or Global. Shun because my local shop stocks them, or Global because they seem to get the most consistent top reviews.

I have a set of Henckels that I've had for years. Great knives.

I love my Global knives, a ton more than the knives I got at Culinary school. I like the one piece handle and blade and very light.

Yeah +1 for Global, they're extremely nice knives as long as you maintain them theyll last you a long time. Great knives especially for a first nice knife set. Later you can get the hand pounded Japanese knife

My knife block is Henckels, and it's awesome - has 6 steak knives and a bunch of others, like a pairing knife, bread knife, etc. It's this one: http://www.amazon.com/Henckels-Inte...1_13?s=kitchen&ie=UTF8&qid=1361402393&sr=1-13

I also have two Wusthoff Santoku knives, 5" and 7". Here's the 7" one: http://www.amazon.com/Henckels-Inte...1_13?s=kitchen&ie=UTF8&qid=1361402393&sr=1-13

I love all of them. My wife bought me a nice knife sharpener for Christmas as well: http://www.amazon.com/J-A-Henckels-...id=1361402486&sr=1-9&keywords=knife+sharpener

Honestly, knives are almost all pretty great these days. The times of piss-poor knives are long over. And "last you a long time," well even the shittiest modern knife set should last you 30 years without batting an eye.

If you are doing a ton of close and subtle knife work, then the balance and control matter a lot. But as for sharpness/durability, that's kind of a no-brainer.

All jokes aside, I've got a set of those infomercial miracle blade things and they have held up well. If you are a serious chef, they are obviously shit, but for general use around the kitchen and a set of steak knifes, I have had them for about 10 years and still use the steak knives, bread knife and one of the others regularly. I have a nice chef knife that I use most of the time when I am doing any serious cutting that cost twice as much as the whole set of miracle blades, but for a $35 set of knives that have seen a decade of use, I really can't complain.

Like this. The reality is that unless you are doing very subtle cutting all the live long day, the "miracle blade" sets actually work very well. The only thing to watch out for is that some of these sets have serrated edges that can't be sharpened effectively, and keeping your knife sharp is far more important than how expensive it is.

I buy the $9.99 cheap sets, use 'em for 8 to 10 years then buy another set.

Henckel and Wusthof imho.

Cutco is also not a bad chouce (But the price point if very high on them.)
