Absolutely beautiful post friend.I've waited tables when I was young and loved getting tips. That being said, I'm completely opposed to the concept.
Firstly, working in a restaurant I noticed that although my job as a server was hard, it was not harder than the cook's job, or even the bus boys or dishwasher's. We all worked our asses off except for the hostess, who has a pretty easy gig.
I could not fathom how I deserved tips and the cooks did not. The primary reason why people leave their house to go out and eat is for the food. They don't come out just to have me smile and be nice to them.
And then if you extend that outside of the restaurant, it makes even less sense. How they hell does a doorman deserve a tip? I didn't ask him to open the door for me. Same with a washroom attendant. He hands me a towel, big deal. That's not worth a tip. I can get my own fucking towel, especially if it means I don't have a creepy guy standing outside my stall looking at his watch timing how long I crap.
But somehow you don't tip your mechanic. Even though getting your car fixed is much more important than someone bringing food to your table. And you don't tip the plumber, even if you're really appreciative of how he showed up on time and went out of his way not to damage your walls further, even though it would've made his job easier. And why don't we tip them? Because they're paid well? If that's the criteria then we should tip Wal-Mart employees.
I still leave 15 - 20% when I go out to eat, but not because they deserve it, but just because it's expected and the social norm, and it's worth the money to not get in a debate over it. But ultimately servers are going to lose because I find myself eating at places where you order at the counter more and more often because tips are not expected at those places. That's the future of restaurants. Places that have traditional servers are going to go out of business as more and more people stop going there.
