Weight cutting the week of sucks donkey balls and you are really hungry but its only a week. Typically im about 165 all the time, 160lbs 2 weeks out and cut around 12 lbs of water weight for a fight at 145lbs.

You're wrong, she was put on that diet by a nutritionist, Chad Waterbury. I don't know if she still works with him, she was last year.
Anyway, that was more of a publicity stunt. The one meal a day was used as a reset just for a short period of time not a permanent thing, Chad changed her eating plan slowlly, using these 7-10 days intervals.
Professional athletes that have money don't lose weight like the rest, they have acces to all sort of substances, pharmacy plays a big part and I'm not just talking peds. You try to come down from a weight where you're a fit athelete while adding/ keeping muscle mass and beeing in fighting shape- good luck with that.
