I wish we had more one night tournaments these days especially in MMA but I doubt that will happen again.

Not at the top level at least. The top MMA fighters pick and choose their fights and not many fight more than twice a year, if that. They wouldn't want to fight 3 times in one night without even knowing who they will be facing. The only place you'll see same night MMA tournaments are amateur tournaments or small local promotions with up coming guys.
