I usually make it with Tempura batter.

I love fried fish. But I’m always disappointed when I order the fish and chips. I just can’t seem to find a good one in LA or Cali.

It’s usually disappointing as most places don’t know to squeeze the water from the fish and season it before battering and frying and you end up with steamed bland fish

fresh salmon is the best fish
I put on it a lot of black pepper and a pinch of olive oil

Batterered flake fried with some lemon on the side and chips with salt and vinegar, it doesn’t get any better than that
