From back in the day Chan vs Benny the jet was always considered the best realistic kickboxing style fight.

not as solid as it should be
one of the main scenes was Jason Scott Lee vs Russel atop climbing ropes

Although IIRC Russell broke his ankle early on, and it altered much of the fight scenes as a result

I remembered that fight, but it obviously had a strange, acrobatic setting. I think that was where Russell took out one of his eyes, but Lee (they thought) killed Russell, and left him hanging. Lee's character got punished for losing his eye.

Was there any after that? When Russell joined the rebels? Or was it all gun battles?

It’s mostly guns, vehicle mounted weapons and ambushes. Plus a 5 year old savant/serial killer.
 
Winter Soldier has some pretty good ones.
 
As I’m watching Kung Fu Hustle for the first time now I’m blown away by the fight choreography! It’s just so damm good! What are some of your favorite films with amazing fight choreography?

Wheels on Meals with Jackie Chan and Bennie the Jet is sublime too.
One of the best in terms of pure choreography IMO. The entire movie is kind of cheesy but definitely worth a watch for action comedy fans.
No one's mentioned Ip Man 1 or 2 yet, and Donny Yen does a great job in those.
I have only seen the first Ip Man. I loved it as a whole and while the fight scenes are great I think most of their impact comes from watching them in the context of the movie, I really got invested in the character and the wider narrative of Chinese oppression under the Japanese. The final fight is one of my favorites of any martial arts movie but mainly for the emotional impact of it within the context of the movie. Not saying the choreography is necessarily bad but I am saying that I wouldn't expect someone to really appreciate them if they watched them divorced from the movie.
