There is and it isn't arbitrary. Large vehicles burn more gas and are more expensive to operate.

I've used UberXL many times, but that's when it's a group of people. This heifer needs UberXXXL.

Let me go into your car and break something that'll cost thousands to fix, which I don't care about since it doesn't affect me, because my lazy ass wants to go from point A to B immediately even though I know I could arrange for alternate transport in a van or SUV with little effort. You need a certain level of empathy and intelligence to understand why the driver doesn't want to risk it, but she doesn't have that.
