Elk.

Eating an animal you have harvested from the wild should not taste like you bought it from the supermarket.

Got a chance to tear up an Elk burger in Denver Colorado. There was no "gamey" flavor at all, it tasted nearly identical to a well-prepped venison steak.

A 12-24 hour Italian Salad dressing marinade can IMHO make all the difference.

I usually go half on a grass fed buffalo with a friend of mine each year and that keeps my freezer full.

Wild Elk is one of my favorites to eat. In my opinion I don't consider "gamey" a taste. It's just different meat. It's supposed to not taste like mass produced food.

I wonder about the age of the meat. The ostrich and kangaroo I've bought in the US compared to The Netherlands, the US stuff tasted like good fillet steak, not gamey dirty aged game. Maybe here in general till the elk from Wild Fork and venison from Grocery Outlet they cull the animals earlier?
 
I've only had elk in restaurants and loved it. We have a couple of ostrich farms nearby that I source locally and wish we had a local source for elk.

Anything bought from a supplier is farm raised. So the wild animal taste should be minimal depending on the livestock's food source.

I have only had ostrich once when I was a teenager. Subway had an ostrich sandwich that I had on a family trip. This was back in the early 90s though. I thought it was pretty good.
 
Elk is alright. I have it in my rotation to eat here & there. My kids like when i use it ground for tacos.

Bison is king tho for me. My preferred.

I make bison and goat meatballs, stuffed with mozarella husband makes which we smoke. Pretty much make meatballs out of what we have knocking about in the freezer.

Same, i rarely use ground beef (except for easy burgers). The kids like when i use bison for Chili Mac or Cheeseburger macs.

I do alternate between bison steaks & prime/choice beef steaks.

Bison Liver is awesome too.
 
Never had Elk but I get a deer pretty much every year and a moose when one of us gets a tag. Both are fine by me but I’m not a huge red meat eater tbh.

I like spruce grouse though. Everybody I know says they don’t like them or they’re too gamey but I like them.
 
Never tried most of the stuff that's been mentioned here. Probably because I live in England, so there's not much going food wise.

I love lamb, duck and goose though.
 
I think I just ate the best meat I've had since I left Amsterdam.

I ordered it from Wild Fork. I haven't been able to find game here that tastes gamey. I understand Americans are put off with gamey tasting meat even thinking lamb is too much so I've even struggled ordering ostrich which just tastes like a normal steak. This was on the money.

Anyone else loving it?


Wish I could get hold of some over here, it gets so much hype it must be great.
