UFC MW's would all be around 220 or 240 if they weren't cutting weight.

All these guys would be heavier if they weren't fighters. Weidman is clearly around 200lbs on fight night ... and if he wasn't dieting and watching his weight ... 220 or even 240 is easy to get to with his frame.
