Chili

With beans when I'm eating the chili in a bowl and always with shredded cheese and oyster crackers.

Without beans when I make chili dogs. But if I'm making it just for chili dogs then I probably will just use canned chili. But if I make chili to eat in a bowl but also decide to later have chili dogs then beans on the dogs is fine. But a true coney dog has no beans on the chili dogs.

Anyway, I prefer all meat chilis but don't mind if beans are added.

When I make chili, I use pinto and black beans.

The only topping I use is shredded Mexican cheese blend.

I eat my chili just plain. In some parts of the country I noticed that they eat it over spaghetti or rice. How do you eat yours?
With Fritos.
 
I tried that once but thought it was too salty. I had it a few times with cornbread and that was pretty good.
While i do add some salt while cooking, I keep it pretty low sodium and add salt to taste when i plate. Yes Fritos are salty, but so are Saltines.
Most of my salt comes from the beef and chicken bullion. And yes, adding chicken bullion along with beef bullion makes a huge difference, in a good way. Its all about complex flavors.
 
I’ve been making chilli a couple of times a month to take to work for lunch.

My preference is a ground beef chilli with lots of veggies. It not traditional but who cares? Mushrooms, onion, green peppers, celery and Serrano peppers work best for me. Top with cheddar and sour cream.

edit: beans? It’s better with but I skip them due to dietary restrictions.

This Texas is fine with beans. And Fritos. And cheese. And raw onions.

I was really been enjoy bean on side but I was no been enjoy when bean was been put inside of chili so yes, I tend to agree
 
I'm Texan & I like chili with pinto beans. I also use roast, tri-tip or stew meat cut up. Mix this with hamburger. No can defend. Just made a batch. Day 3.

Not a fan of beans, in general. If added, I prefer they be kept to a minimum (like another poster said, 10-20% at most).

As for toppings, sour cream with diced green onion and/or chives + shredded cheddar along with a fresh crusty bread to dip.
