Sure. But a 60 year old man beating a 30 year old man also needs context. Said 60 year old man could be an experienced (former) world class fighter, and the 30 year old could be ... CM Punk level, let alone even worse.

Bas Rutten, i.e.,is 58 - and I would favor him in a fight vs lots of 30 year olds.

Context matters, as you said. But it's obviously impressive if a 60 year old beats an elite fighter aged 30.
 
Just to add to the list Couture vs Vera and Hunt vs Struve where both about 14 years difference with the winner being the elder
 
Since age is so key in the lighter weight classes (where a small drop in speed/reflexes is huge), a 40-year old Urijah Faber beating then 26-year old Ricky Simon was very impressive. Especially since Simon went on to have a 5-fight win streak shortly afterwards.

Like other have said, context matters. So does the quality of the opponent. A 58-year old Dan Severn beating a barely trained 30-year old in some tiny org is impressive, but there's still a huge skill/experience gap.
