BBQ Sauce request for help (arguably an emergency), plus why not talk about BBQ?

One good strategy, is to buy a sauce that is close to what you want, then adjust it with some other ingredients.
Most are too sweet.
So maybe if you start with SBR, then you could add a bit of the following until you hit the right profile:
  • Mustard is a good neutral base. Not too hot, or tangy, and counters the sweetness a bit.
  • Ketchup is pretty neutral too, but if you add to much it will make your sauce taste like flavored up ketchup.
  • Or Tomato sauce, too much will make it too "tomatoey".
  • Pureed chipotle has a lot of heat and smokiness, but can really take over the flavor.
  • Worcheshire adds umami and richness, and/or Soysauce.

I had some pretty delicious BBQ today. They had a few different sauces to choose from but my fav by far was the mustard based, “Carolina” style. So bomb. I’m not a big fan of overly sweet bbq sauces.

Not "sweet" - A little sweetness is fine obviously, but not like SBR. Molasses and a touch of brown sugar is plenty sweet. Going for savory primarily.

Thick, solid, tight, dark - Nothing on the loose side, the thickness of SBR is good. I want to be able to slap it on some ribs and not come back to a puddle like most of the stuff you find around STL.

Ancho = bueno, but negotiable.

A little smokey is fine - I don't want to taste any damn liquid smoke though. SBR is reasonable on smokiness, kinda, but not really. I think it's a phony.

Heat is negotiable - Good dijon mustard level is okay, not looking for a mouth burner though. SBR is not spicy enough, obv.

Tang is not what I'm looking for (u can say that again u cuk luls) - Nothing really sweet, nothing really tangy. You might could hang w/a titmouse worth of red wine vinegar but I'm warning you, be careful, this is a subtle game.


Exist such a beast? Tell!

I was going to recommend Sweet Baby Ray's, so I guess I'm out.

It's from Western Canada though, so not sure how easy it is to get in the US. Found it on amazon. It's the best store bought stuff I've ever had. Not overly sweet like Baby Rays.

Dunno if you can get Rudy's BBQ sauce on amazon but that may do it for you

Best bet probably go with what the poster above recommended who runs the BBQ food truck

dude you've been in St Louis for how many years now. Plenty of folks there are BBQ kings. Get invited to a cook out, they've got you.

I've had some good BBQ here but it's quirky and I'm not stoked on anything in particular that I've tried.

The fried chicken and okra here gives me sex mumps, and the best burger I've ever had (ironically a BBQ burger). Yeah food here rules except for Mexican. I'm just looking for a very specific flavor profile that eludes me.

Kraft was decent when it was no HFCS

For some god dam n decided to go back to using fuckin HFCS so fuck them

I just by SBR now because its all HFCS garbage anyways, fuckin asshole government fda commie christian losers
