Sounds lovely, did you cleanse your soul?

All good thanks, had a bug so ended up sleeping a lot, but I just needed to detach from the world and reality, and it was quite successful!

Body and soul clean as a whistle!

Detachment is such a fantastic mechanism - in essence it's what i did too, with the home-retreat - and i'm glad you got the breather you needed and healed yourself.

Hey, since we're chatting, how would you spice a pumpkin soup? I plan on buying another Hokkaido when i've finished this one (they so damn good and silky) - i usually season with salt and freshly ground pepper, bit of garlic, onion or chives and a sprinkle of nutmeg.

Detachment is a gift but it could be a curse if you let it take control, it's a fine line but I'm glad it comes naturally for me

Pumpkins! I have two squash to use up soon actually, might do a soup for next week as well.
Do you roast your pumpkin first? Some people steam or boil it but I find roasting it gives a little extra sweetness to the flesh.
Last time I quartered it and put a few baby tomatoes and a garlic clove in each piece (tomato adds to the sweetness).
Nutmeg is good though, a little smokey paprika maybe and some whole black peppercorns and sea salt.
I like spicy as well so maybe sautée some shallots in coconut oil with a couple of dried chillies for warmth.

You're making me hungry!

Indeed. The trick is doing it for the right reasons, so detachment doesn't turn into indifference.

I've never roasted pumpkin before (I'm a very basic cook - i just boil or fry everything.
Haven't used an oven in more than 15 years (and even then it was such a rare occasion i can even remember the last ovencooked dish i did, it was a rotolo di spinaci) but i will now you've described the process so handsomely, with tomatoes and garlic... sounds absolutely great!
I do love smoked paprika a lot, though try to use it sparingly to savour the unique taste of it, otherwise it's one of those things, like truffle oil, i just end up adding to everything cos it's so good with all the things i tend to like.
Yeah coconut oil and hokkaido go together like hand in glove, so it's a good idea to sauté shallots in it and add to the soup.

What do you think of cream of coconut - too sweet for pumpkin soup? I had a spicy pumpkin soup in Prague in October (around halloween) where the chef had draped a white spiders web onto the soup, using coconut milk - barista style. Looked super, and tasted even better.

Boiling makes most sense really as you make the stock as your going along, but if you roast them you need to make a stock separately to blend it with.

I find I use too much smoked paprika sometimes, it really takes over the flavor if you're not careful, and I have a really strong one at home we brought back from Hungary a while back.

Cream coconut could be good, do you use a block or the tins of cocnut milk? I think the tins might be too rich but if you grate say an 1/4 of a block into the stock, it would give it a nice creamyness without being too sweet.

Loved Prague, even with the masses of tourists you can still find the little quiet areas that are untouched almost. And SO cheap!

Yeah, Hungary-paprika is something else, eh. As is Hungary, beautiful country. How about those enormous portion sizes everywhere :D Agreed on Prague, i love it there.

I use both - tinned milk for sauces/soups, shreddings from the block if i just want to add flavour, or a crisp fry.

Thanks for soup ideas - can't wait to get on it! Also thanks again for the great Christmas avatar, was a little sad to change it yesterday. He looks so naked without the epic beard and santa hat and festive gifts, but it was great while it lasted :D Hope you guys make an Easter bash too, maybe party up the avatars again, it really made the forums look great this month. Have a great weekend, HP.
