I am extremely skeptical, tbh.
It doesn't seem possible for two reasons:
1. You would need to rewrite the script; redo the production breakdowns of the script; fire all of Renner's assistants / wardrobe / make-up / acting coaches / stunt doubles / other personnel and redo all the production logistics of no longer paying them, transporting them to and from sets, etc.; potentially reschedule shooting days or book re-shooting days. These can turn into protracted problems.
2. Not have Renner sue your fucking ass off for breach of contract.
Both of these are crazy to do in the middle of filming, especially when the second point would result in a protracted legal disagreement.
They deal with these things all the time. In one of the MCU movies they basically shot Scarlet Johanson from the waist-up because she was pregrant and couldn't do ANYTHING on camera because you'd see her belly.
IMO, it would be easier to use him with two broken arms (especially since he's not a lead) than to remove him. And I think that the biggest reason this probably isn't true is because we'd have heard about it by now, covered as legitimate news.
