I think you're under selling the Gauntlet. Stormbreaker appears to be mega powerful but it's still not the IG, the most powerful weapon shown in the MCU.
If Thanos wasn't sure he could take the blow and still accomplish his goal, why not use the space stone and send him to Hala or a Skrull planet or somewhere?

WS is the movie that made me like Cap. I was like, “Ohhhhh, that’s what he’s about.” That elevator fight...Total BA.Sorry, guys. I went into the movie wanting to like it, but as soon as Cap put away his shield to fight GSP my heart sunk and I immediately knew that every single moment of the movie was going to go exactly as I expected it to. That's not the end of the world, I've enjoyed predictable movies before, but that's usually because I'm caught up in the characters. Not in WS. There wasn't a single moment where I was intrigued by the characters enough to go along for the ride or even simply enjoying the characters enough to just watch them do their thing.
It was an okay movie, imo, that I didn't enjoy and will certainly never go out of my way to rewatch.

Again, Thanos was sure he could stop Stormbreaker with the IG. By the time he figured out it could cut through his defences, it was too late. As I pointed out, it's not the first time in the movie his arrogance came back to bite him in the ass. He could have killed all the Guardians when he kidnapped Gamora. Instead he left them alive, and Mantis was able to put him to sleep when they fought on Titan. If Starlord hadn't been such an A-Hole, Stark and the others would have managed to take the IG from Thanos.
When Stormbreaker was being forged it was specifically specified that it was to a be a weapon capable of beating Thanos and they knew he had the gauntlet and was going for the Stones at the time. So it should be no surprise it has the POTENTIAL, but potential does not mean its the favorite and it (and Thor) might need a bunch of things to fall into place to get the win.
With Thanos pretty clearly reeling as he was adjusting to the gauntlet synchronizing the power of all the Stones that was clearly Thor's best chance. There is clearly a period of time where anyone who tries to wield the stones is tested by the power and either consumed by the Stones or they learn to control the power (think of GoG1 and Starlord and others linking hands) .
When you say stop him with the IG, what do you mean? The gauntlet itself isn't a weapon, the stones are weaponized for use.
Thanos may have been exceedingly arrogant at times, but he was never stupid and letting a clean blow from a weapon potentially capable of killing him would be moronic. The time stone allows someone to see the future, if Thor was gonna kill him, wouldn't he know? Strange mentioned seeing future events and only one scenario allowed an Avengers win, so I believe even if Quill hadn't fucked up they may have still lost since it seems as if Strange allowing Thanos to take the time stone was part of the master plan.
We've seen the power gem alone be capable of razing a planet (the clip of a Celestial obliterating a planet during the Collectors speech in GotG v1) and the time stone literally being the biggest dues ex machina by allowing someone to stop and rewind time. There's no doubt Stormbreaker is insanely powerful and was designed to allow someone to fight Thanos but at the end of the day, it's offensive capabilities pale in comparison to all six gems being used by one person
well that highlighted part makes no sense to me but I did not follow the Stones in the comics.but Thanos has had the power and space gems for a while and was clearly capable of using them to their full potential. It even showed him mastering the reality gem after just acquiring it. The movie, like the comics, seemed to point that all the gems want to be together and the more you have, the easier they are to control. If you have infinite power, using the space gem to teleport becomes easier, etc...

He had no idea of the true power of the weapon, and by the time he realised he was in danger, it was too late.
2)Power doesn't always equal control. Thanos could have used the Time Stone to freeze Storm-Breaker and Thor in midair. He could have used the Space Stone to teleport himself out of harm's way. But he was over-confident as he'd already soundly defeated Thor and the rest of the Asgardians. If he'd known about the true nature and power of Storm-Breaker, no doubt Thanos would have handled things differently. But he got sloppy and very nearly got KTFO.

So what you're saying is Thanos did in fact let Thor hit him because of his overconfidence. We aren't disagreeing about Stormbreaker, it's obvious Thanos didn't expect it to be quite as powerful, but it's still clear that Thor alone with Stormbreaker is no match for Thanos and the gauntlet. That was my whole point. It illustrates just how powerful the gems are, as Stormbreaker likely kills every other being in the universe outside of Celestials and it's still not enough to stop someone with all the gems.
I also think you're overstating the blow, it was a significant blow but it didn't even knock Thanos off his feet.

I feel bad the actor is getting shafted in these movies. Very few of these characters are actually interesting on their own, so it's not like the character of Hawkeye is any less interesting than Captain America, Thor, Black Widow, etc.
His character has as much potential as any of them. I'd like to see them use him instead of bringing in new characters.
