If a fighter used AI today to make a gameplan for his adversary the answer would probably be "don't even worry since your opponent sucks, all his best wins are washed fighters and wasn't ever my friend."
Since all AI does nowadays is make a giant resume of what it reads online...
I'm not sure AI has that big of place in MMA directly.
Maybe in the form of maximizing a diet or strength training. I guess it could be used to help analyze a fighter. But that would be nothing more than what any good coach could tell you anyways.
