437 lbs to 250 - low carb

My optimal fight weight is/would be 140lbs. You lost a whole in-shape boxer.
 
Down to 297 today.

Decided to offer a recipe I have been perfecting over the months. One of my staple foods is eggs, and especially in the form of an omelet. I present the Nemesis Omelet.

Ingredients:
1/4 bell pepper
1/4 onion
4 eggs
2 slices cheese
thyme
montreal seasoning
2 slices bacon
Skillet with cover
Spatula

Procedure:

This is written for a complete culinary noob like I was when I first started.

Cut onion into quarters so you can unravel it with your hands, then unravel all the rings of one quarter. Cut rings into halves so you have a bunch of triangles.

Cut bell pepper into quarters, cut quarter into small half inch blocks.

Mix 4 eggs.

Cut 2 slices of bacon into halves and put on medium low heat.

Once the bacon grease begins to separate from the slices introduce onion.

Stir fry the onion until it becomes caramelized (light brown hue with maybe the edges being a darker brown). Stir/tilt pan so the bacon grease cooks the onion. You can also introduce the bell peppers at this stage, but I like to do it later so they are crunchy. Flip bacon/onion every few minutes. By this time, if you waited for the bacon grease to separate, once the caramelization is done the bacon should be done.

Prepare all materials. Remove onion/bacon, separate onion/bacon. Turn off stovetop or put on very low heat. Put egg mix onto pan. Quickly introduce the onion, peppers, thyme and montreal seasoning and then cover the pan. Resume to medium low heat.

Check every few minutes until when you open the lid you see no wet egg still present, if there is a little bit that won't go away just tilt the pan so it cooks on the edges. The mechanism here is that the top of the omelet is being steamed and the bottom is being cooked by direct convection - so there is no "Flipping" involved at any stage.

When it's done you should have what looks like a pizza. Cut cheese slices into halves and arrange them horizontally in a cross shape. Place bacon slices on top of each. Place spatula at the top of the pan under the egg, and slowly apply pressure downward in a scooping action. It should flap over like folding a piece of paper in half.

Wait 2 minutes, eat. Have an orgasm.

Can also add pepperoni, pre-cooked chicken and a small splash of salsa for a nice effect and depending on your macro needs.

I gave the omelet a go minus the Montreal seasoning. It was amazing except for egg portion was way to thick, next time I'll try a bigger pan. Thanks.

Oh and a massive fuck you to bacon and how shitty it is to to fry; I've figured out how to microwave it to just how I like it despite losing the grease. I just used butter and salt in the omelet.

Have you been able to find nitrate free bacon?

I've lost 60lbs on a low carb diet before. When you decide to get off gradually introduce fruits and whole wheat grains. You'll always need to count calories and always measure your portions. Exercising is a must as well. It's easy to get into old habits when you reach your goal.

As you've noticed constipation is a big problem. I was so backed up that the shit inside my colon was pushing against my bladder making it impossible for me to urinate. I had to go to the doctor and he prescribed me some hardcore stool softener.

Constipation is no longer a factor for me - I eat a variety of fibrous vegetables/seeds/nuts, but the main thing I attribute regularity to is the flax. Avocado is also amazing.

Oh yeah I have tried to make this omelet with a small pan before it and comes out crappy, mainly because the bottom can get burnt because the top takes longer to cook. The mixture needs to be spread out with a full sized pan.

I'm not worried about nitrates in the meat - and i'm too poor to buy anything special.
 
I've experienced the exact opposite with frequent bowel movements that come very fast, at least two a day but not quite regular. I need to pick up some flax seed and see if that helps.
 
Every time I read this thread, and look at your pictures I almost cry. Actually, today, I dropped two fucking tears (1 out of each eye).

At 293 as of today, time for a pre-vacation update. Going down to Florida to visit my dad this weekend and coming back by next weekend. This will be an opportunity to document just how sensitive someone can be to carbs because I will probably return 25 lbs heavier. Of course, most of that weight will water weight, but it's still an interesting phenomenon, and I will probably gain a few lbs of actual weight. You can see other times I had visits from my dad in the weight chart- identified by acute, sudden spikes in my weight.

I will probably piss out most of the weight over a week and a half. And I can assure you I won't be gorging every day - although i'll probably eat out quite a bit and eat substantially more than I do on a normal basis. A normal person might gain a lb or two considering my caloric intake, so it should be an interesting demonstration of shitty genetics at work.

Also when I get back I intend to start high intensity lifting as per Lyle McDonald's suggestions here:

Another thing I want to bring up is that I finally figured out how to eat avocado. Why eat avocado? It's arguably the best source of fiber and fat available:

In the past I attempted to prepare avocado as guacamole. The concoction always came out disgusting, probably from over-processing and seasoning. I failed 3 times in the sense that it was so unpalatable I could not stomach it.

Fast forward to this week, I buy a bag of Hass avocado and while making chicken one night decide I am going to try something especially lazy, my forte. Just scooped out the avocado into strips and eat it plain with no seasoning. Very tasty and contrasts amazingly well with meat. So this is how I will eat avocado, and perhaps slowly introduce seasoning as I figure out what's best. It's amazing what a difference a botched preparation can have on food.
 
I used to binge on weekends when I was on low carb (first time around). I'd get these horrible stomach pains I would gain around 6-14lbs too. Have fun on vacation man.

On a regular weekly basis, ill have one cheat meal on friday, which is usually around 1500-2000 calories. Other than that, I have no problems with my normal dietary plan and it only gets better with time as I find tweaks and improvements and learn how to cook.

Worried about the weight gain from vacation, but such is life.

Post vacation damage report and incomplete food log

Starting weight: 294
Left on a sunday, returned on a sunday, less than 7 days.

I returned yesterday afternoon at around 11 AM and weighed in at 311.5 (+17.5 lbs). Then commenced a 30 hour fast. Weighin today was 305.2 (+11.2 lbs). This week will focus on low calorie, excess hydration and IF to cut this weight. I suspect most of it is water and will be gone by the end of the week.

What did I eat on vacation? Nothing too bad actually, probably better than most of you would have done.

When I arrived we had Long John Silver's, I eat fish and chicken (fried) with some hushpuppies. Not a great start, but then I eat 4 eggs, meat, cheese and onion/pepper for breakfast every day - basically the same thing I eat normally. My water intake (only thing I drank) was about 1/2 or less of what it would be normally (~70-90 ounces versus 150-200+ ounces) and sporadic.

For regular meals at the house it was slightly higher carb than what I would eat normally, but not by much, and I substituted starches for avocado. An example is one night everyone had rice, potatoes, chicken cutlets (with breading/mayonnaise sauce) and green peas. I did not eat the potatoes or rice, and had avocado instead. Most dinners were in this manner (another night people eat shrimp with pasta, and I eat shrimp with greens).

I did have a few legit cheat meals. A tipple patty bacon burger from Wendy's with a large fry. At other times I had 5 chocolate chip cookies, an indulgent Greek meal of souvlaki and a ton of hummus/pita and a few borderline cheat meals while going to the parks at Disney (like a pork wrap with couscous in a yogurt sauce and a piece of bread).

The last thing I eat in Florida was a hero/sub/hoagie/whatever you call it from the airport - the bread was crap and probably high in carb.

I can't wait to get back on program, I feel like a piece of shit whenever I eat off plan.

A lot of people could simply maintain their current weight if they would just drop their liquid calories. Since you still only drank water on your vacation and still gained that much weight is pretty astounding. Best of luck to you getting back on track, keep up the good work.

Yeah I pretty much have the worst genetics ever. This thread will hopefully demonstrate how important genetics is in determining weight and sensitivities to various foods.

I think a normal person would gain less than a couple lbs from what I eat. Oh well - i'm not complaining.
 
You do not have bad genetics. Just bad genetic expression. Don't worry, as you lose more weight and make more adjustments to your lifestyle and diet the pounds will come off and you'll respond to food differently than you do now. I know Sinister said otherwise earlier in the thread, but ignore that, because he has no evidence to support his opinion. How you respond to elevated blood sugar is actually modified by epigenetic modifications on a Lys 9 tail of Histone 3. This area has three different levels of methylation (mono, di and tri), and the level of methylation on this site determines how much TNFa (an inflammatory factor that inhibits AMPk activity and fat loss) is produced in response to elevated blood sugar. And you are still young, which puts you in an even better position.

I think once you take up weightlifting you'll see a serious change in how you respond to food - it has a major effect on adiponectin receptor and serum levels, and the temporary post-exercise boost in IL-6 and other pro-inflammatory factors actually ends up contributing to increased AMPk activity (fat burning), among other positive benefits. Honestly, the fact that you've lost this much without weightlifting is an impressive feat on it's own. Not just that, but it's possible increased (even temporary) testosterone production you get from lifting will make you more sensitive to fasting hormones like catecholamines and adiponectin - so fasting will become an even more effective way of fat loss.

Just one adjustment I think you can make - you could eat a lot more vegetables. I only read your opening posts on what your diet is like, so you may have already changed that. But even while doing a ketogenic diet, there is no reason for you to not be consuming +2 large plates of veggies a day.

Do you do exercise at all? You seem to have a negative attitude about going to the gym. No gym (except for the high end ones) cost $80 a month unless you receieve professional training.

Exercise is essential if you want to reach your goal, if not your weight loss won't only come from fat it'll also take a shit load of muscle down with it.

I do bag work regularly and I lift occasionally (deadlift/squat/DB presses).

I know what you two are saying re: lifting. I want to start high intensity lifting as per Lyle Mcdonald's recipe here:

Up until this point I have focused on nutrition because I didn't want to try too many things at once and get burnt out. SO far the nutrition has been effortless and I think i'm at a point where I have mastered it - I know exactly what impact foods will have on my body, and can reliably calculate how much my weight will fluctuate over time.

I am not anti-exercise, I just think it's more of something that will make you healthier and can *aid* weight loss; it's not a foundation of weight loss, nutrition is. Why do I think this? I once was on a "picture perfect" diet as per the popular media, eating a high carb, low fat diet and busting my ass by boxing an hour a day. Wasn't losing weight. Once I changed my nutrition and went LCHF it changed everything, I began to rapidly lose weight and it hasn't stopped since. Clearly working your ass off is erased by bad nutrition.

The next big frontier for me is to become a monster - I don't want to bulk up muscle or put on too much weight but I would like, as I said, to start lifting on a daily basis rather than occasionally. As we all know, occasional measures don't make results - it has to be a daily, consistent effort. I learned this from my journey thus far.
