We talking about stylistic matchups. Eddie and Jose are both reckless brawling strikers, they got away with it because they hadn't been against fighters who could reeally make them pay for it. They are cannon fodder for a masterful counter striker like conor and 10/10 times those fights would end in a similar way. But put him against someone who can match the boxing or who employs a grappling heavy style and now things get interesting.
If he actually wanted to defend one of the belts, he would have.
