Why didn't Georges St-Pierre fight like he did with Jon Fitch more?

Fitch
Koscheck II
Hardy
Condit
Alvez
Diaz

all of these fights are more "entertaining" (I never exactly used the word exciting, as i feel there is a distinction to be made there) than many of the title fights we've seen today in modern times people went on and on and on about how boring gsp fights are, but these are in my opinion about as good as the average title fight today.
True, he was just completely dominant in those fights. People didn't like them because they were culturally trained to enjoy "back-and-forth" stories with an underdog winning (Rocky movies).

GSP fights weren't boring, they were predictable. you knew what geroge was going to do, The question always was "can they stop it?" Usually after round one, you know what exactly what direction it's going to go and that makes it not exciting.

Woodley vs wonderboy 1
Woodley vs wonderboy 2
Woodley vs Maia
Usman vs Masvidal 1
Leon vs Colby
Leon vs Usman 3
Leon vs Usman 2

Were all more boring than the Average GSP title defense, and I didn't even leave WW.

People are still ignoring this fact like a decade later.
It's amazing he was able to compete at such an high level even afterwards.

He was his own worst enemy. Never truly recovered from that Serra loss mentally. Coulda snapped Harry's arm but chose to let go.

GsP even stated this was the fight that made him rethink his gameplan. He was worried he'd spent to much energy early trying to put Fitch away and that he had fears mid fight that he was gassing. He realised not everyone will be steam rolled early.

GSP felt like Fitch wasn't a threat with his striking which he clearly wasn't . Calculated risk. Great fight tho. Got to see vintage GSP strike

Because it's not a sport but a business. He protected himself and didn't risk his future for idiot fans who will forget him 5 min after the fight.

War GSP

Exactly, he achieved essentially everything that could be done in the sport and left with his faculties intact. I'm glad he's not giving slurring interviews now to TMZ like a Chuck Lidell.

Fitch never posed a real threat to gsp. He became what frank trigg was years earlier. A guy who can beat the whole division, except Hughes and gsp.

Because he had him totally overmatched on the feet , he wasn’t going to willingly stand with Penn,Alves or Condit if he didn’t have to , at least not until he beat them up and slowed them down first

The narrative of gsp being boring is very unfair if you look at his career as a whole. He had more decent- good fights than he did boring.

These fights of his were not boring:

Karo
Hieron
Hughes 1,2, and 3
Miller
Trigg
Sherk
Penn 1 and 2
Serra 1 and 2
Fitch
Alves
Koscheck 2
Condit
Hendricks
Bisping

The boring fights?
Shields
Koscheck 1
Dan hardy
Diaz

That's about it, if you want to add koscheck 2 to boring because of how onesided it was, then....whatever.
