I've never forgotten Brian Stann pulling up and signalling to the ref that Alessio Sakara was unconscious rather than carrying on pounding away until the ref stopped him.
I also always thought it was funny that Shogun, one of the most aggressive finishers in the history of the sport, would never mean mug an opponent and would always offer a gentleman's handshake rather than a fist-bump.
Demian Maia saying that he doesn't like to hurt opponents, which is why he always aims to win primarily using "the gentle art".
And then there's Hunto, who refuses to deliver any more damage than necessary after he's separated his opponent from the waking world.
