use 3 different kind of meat: veal, sausage, brisket, lamb etc roughly 2-3 lbs
1 cup bread crumbs
1 cup parmesan
3 eggs
Crushed red pepper
Salt
Pepper
In a blender:
1 onion
1 bunch flat head parsley(mostly the tops)
Handful of garlic cloves
1/4 - 1/2 cup broth (beef, chicken, veggie, whatever)
Blend the onion & parsley paste, then add everything to a bowl and mix it up. It should look weird & green. I usually make small meatballs and bake them before poaching them in the sauce. All the measurements are approximated, I try to use a 1 egg per pound of meat ratio then add one more egg.
