Googling NY, I discovered it is east coast US. I researched the URL for the UFC website (found ufc.com) and navigated to the event details. Looked for start time. Phew, I need a beer after all that hard work.

To this day I’d think they’d do a better job of making these schedules clear enough. It’s been a problem since forever as far as I remember.

It will always be obscure. There's probably an agenda behind that. It's like NHL games where they keep saying "coverage begins at 7 PM". I don't wanna watch the bs talking before the game, nor the goddamn national anthems. I wanna know at which time the game begins.
