I was wondering about this.

A fighter can fight in a certain weightclass (let's say LHW) and weigh-in 184 lbs? Does he necessarily needs to be in the gap between 185-205?

yes, athletic commissions require that you be within the weight class. Ive seen it happen in lower level pro fights, guy came in underweight...so he went back chugged a bunch of water and reweighed in and made weight. He got his ass kicked btw.

Yes, otherwise it will be a catch-weight fight, and i believe some AC do not allow a huge weight difference or something, it was mentioned in the last Ken Shamrock fight in Bellator.

Most fighters or every fighter usually comes at the upper limit of the weight class (weight cut), so it would be weird someone to try a fight lets say at LHW and weigh-in at like 190lbs, when the other fighter would usually weight over 205lbs on fight night.

In boxing i have seen fights signed at an specific weight withing a weight class, not always at the class limit like in the UFC.

And absolute-weight fights still happen? I'd like to see it

Yes. For Hendo to fight Fedor he had to kill himself with water just to make the 206lbs requirement. Which further solidifies what a complete bad ass he is.

making absolutes just doesnt open up enough fights for it to be worth it

Can't find a legit source outside wiki with Hendo saying he struggled to put on weight. It was a sherdogger who was a decent poster and massive Hendo fan who said it and I just took their word for it. I'll keep looking.

it was a video interview where he casually said "I'll probably drink alot of water". The original idea was for Fedor to make a run at LHW and challenge Hendo's belt, but he didn't want to cut the weight.

Considering that the Hendong takes up quite a bit of the 206 lbs, he's even more of a badass.
