IT HAS TO BE that super rich almost orange yolk. The normal North American "yellow" eggs are fucking TRASH for it.
It’s because Americans eat mass produced store bought eggs. I buy these expensive organic brown eggs. The yolks are darker and way more delicious. Even the shell it self cracks differently than paper thin white eggs. The shell on organic eggs appear to be healthier as well.
There is a farm and amazing restaurant called Blue Hill in NY and they have these amazing red yolk eggs. They grow these red peppers on their farm and chop them up and put them in the chicken feed. Because of that the chickens produce a beautiful egg with a red yolk. Amazing stuff
