Old school super heavy grandma greaseball flat ones are the best imo. Once the fibers of the meat contract, the raised parts of the grill mark style pans prevent the entire surface of the meat from being in contact with the pan, so shit doesn't cook right.

I feel like I did an ok job cooking on it. The only real issue I had is the clean up (getting the little bits of seasoning that ended up between the marks unstuck) and it dried unevenly on the stove when I put it on a little bit of heat.

my mom has my dad’s side of the family pair of cast iron pans. One is a regular one and the other is a very deep almost mini pot that are both seasoned well and will be mine at some point so I didn’t need another flat bottom one
