I am not seeing how it matters if Joe is not contesting the issue. Maybe, he has the shakes and his signature is fucked. There is no magical ruling in law for someone's hand to be on a pen. All kinds of legal documents have electronic signatures. It is like make a big deal over something that is a defacto standard in many industries. If Joe said I didn't sign this nor intended to approve something, that is another issue but that isn't what is happening.

I'd say its questionable if a person that can't write their own name is of sound mind and body to make such determinations.
