How the hell are they structured?
Anyone knows?
Must be a shitload of small text paragraphs and shit.
Does fighters has any chance of negotiating anything? I mean
They cut fighters left and right,whatever reason the UFC gives seems to be a valid.

they sign a 3 fight contract that states the UFC has to give them 3 fights in a year, thats all i know

Even if the fighter is in the right and legally shouldn't have been cut, a poor fighter isn't going to be able to afford a sustained court battle against a billion dollar company.
