Who are they and how would you rank them?

My understanding is that it is something along the lines of:
  1. Olympic Medalist
  2. NCAA Div I (and non-US equivalents of that)
  3. other...

Probably others. A lot of those with the best credentials never quite clicked in MMA.
 
Yoel, Cejudo, DC, Rosolt (big slow), Hendricks.

If we allow Schultz with his one fight replace Hendricks with him.

Rosholt is the one who gets under appreciated in terms of his wrestling resume

All those guys only won amateur wrestling titles. Lesnar and CM Punk did it at a professional level.

I have a few thoughts about that.
  1. Good chance those guys wouldn't have done as well in actual wrestling
  2. Part of the reason they outwrestled decorated wrestlers in MMA is that those decorated wrestlers put in the best years of their lives into wrestling whereas GSP/Bones did MMA for most of their adult lives. I don't think Jones would have even survived against DC if DC went into MMA in his early 20s instead of going into it when he got too old for elite-level wrestling. Like literally, imagine that Jon Jones retires after his suspension is up and tries to reach the pinnacle of Greco-roman or folk wrestling. He wouldn't even make it into the top of his weight class whereas that's exactly what DC's journey into MMA was.
 
Punk, Lashley, Lesnar.
Ronda is also up there even though she never did any wrestling until after the UFC when she went to the world wide wrestling federation.
