Takanori Gomi has been my favorite fighter for almost a decade, since his impressive Bushido 9 championship, beating Mach, Kawajiri, among others.
I've been also a big fan of some fighters like Fedor, GSP, Machida, Rockhold, etc.
Now, with Gomi being far from his prime and the elite competition, if i'd have to name one favorite fighter it would be:

That's one of the most impressive performances i've seen on the octagon. The way RDA demolished a good fighter like Nate Díaz, like he was fighting an amateur, the way he dominated the standup was outstanding. I mean, you're not used to watch a (tough) fighter being totally outclassed, like he was just waiting for the fight to end.
I like a real well-rounded fighter like RDA, a BJJ black belt with top of the game kicks and boxing. And he's a good guy.
Lucky Conor McGregor he got injured. He was gonna get exposed 10 times worst than against Nate.
