I'm surprised they didn't include Francis saying point-blank that he underestimated Stipe.

You probably could make the same kind of reel for all successful fighters; I mean, what opponent comes in promising to lose in the 2nd? But Stipe has a particular gift for being underestimated. And Ngannou's prefight attitude was a particularly vivid example of the phenomenon.
