Hey Man, those pork burnt ends look amazing. I saw your pictures, but can you please provide a quick breakdown of how you do them? I've tried it before by cubing them and then putting rub on the sliced sides, and then smoking them in a bit of apple juice/apple cider mix, and it came out pretty shitty.

I'd really appreciate a quick description. Looks great man, I'm about to drop a shoulder in the smoker right now and I'd really like to give it another go with the pork burnt ends.

I did them like I'm doing pulled pork, except pull them off at internal temp 170. Cut into 1x1 cubes, coat with bbq sauce (mine was leftover from when I made ribs) and a healthy amount of dry rub (same as I did on the outside of the pork to begin with, I added a few cups worth of rub).

Depending on your time left you can do slow at 225ish still or turn the heat up. I noticed they got a nicer char if I turned the heat up higher for a bit. Go in there with some tongs and turn them over after a bit so the other side can get the juices. Its done when they have a nice color and seem tender.

world championship cook off is airing on the FYI channel (Mondays I think) the guys that make the smoker I have won it this year. It should be worth watching because they cook all kinds of food so it might give you you some different things to try
 
Goin to get my Traeger Texas grill this Saturday when I get off work. Can't wait to eat some ribs
 
Did some experimenting this weekend and slow cooked a pork belly and short ribs. Came out really well.

Another thread reminded me to post this here. For people using gas grills (or even charcoal grills, but especially for gas grills) I highly recommend this product.

They also transform any gas grill into a top notch cooking machine - no more flareups, even heat throughout, and overall everything is just better. I can't recommend it enough - they are expensive, but will transform even a cheapo gas grill into an easy to use, consistent grill.

His advice was also to flip the grates over for deli style burgers or other griddle type applications (e.g. bacon). It works flawlessly.
 
I still use my gas grill a lot for smoking. Simple as shit to throw a foil smoke pouch together and get your temp set.

Ya I got that smoker box that fits perfectly between my burners. Super easy to flip open to add more chips.

I used it last night for some chicken kebabs. Had them indirect while it smoked for about 30 mins at 300, then when they looked close I sparked up the flames to char them up a bit. Turned out great.
