Nog didn't see it because he was already out on his feet. The .gif doesn't tell the story that Nog was already knocked silly from a nasty uppercut and some follow-up shots. Nog was defending against the overhand right (or at least making an obvious effort to do so) earlier in the fight.

yeah, at that point hunt was already very gassed. It's much easier knocking out/knocking down someone who is gassed.
