Q: re Dariush getting his pay

So Dariush got his show and win money but I wondered if this would count as a fight on his contract? When the UFC wanted to get rid of Leslie Smith she won her fight so they couldn't cut her and decided to pay her for her final fight owed (maybe it was 2???) If Benny had say 5 fights does this one drop it to to 4? Anyone have any insight?

No, he didn't fight. It doesn't matter if he's not the one who backed out.

If the UFC paid him they did it out of good will. But they do not have to.
 
When Aspen Ladd missed weight against Sara McMann, the bout was cancelled and McMann was paid her show money. That was the last fight on the contract of McMann, so I'd assume it's the same situation here for Dariush

They actually do have to pay.
Islam's opponent pulled out but he was offered an alternate fight, had he declined he would not get paid despite making weight (aka Show). Dariush was not offered a replacement and since he showed up and made weight he is owed his Show money and possibly his win money but maybe that part was the UFC being gracious.

Anyway, the UFC has counted paying them as a fight, but they have only done this with fighters on their last fight and they want to get rid of, like Leslie Smith or Diego Sanchez, its a good question in this case, i dont think they have an issue with Dariush and paying him in this case would ve pretty fair, its the promoter cancelling his fight on weigh-in day.

It probably works on a case by case basis. It may be that the fighters are given a choice. In the case of Dariush, the situation really does suck for him and they should help him any way they can.
 
If a person makes weight and doesn't fight due to shenanigans, they should definitely be paid show money at the very least
