Looks good! Haven't had Paella in years. :(

She says if she were to expect the cured stuff to be cooked in to something it would be a rice dish that isn't very wet. But that's just one person's impressions from growing up in Southern Spain.

She is Spanish? no wonder, these mediterranean folk get pretty mad when people alter their traditional recipes, which are pretty healthy.

But you are American and im Mexican, so i think we know that stuff is better when its fried on its own fat.

Here is a good recipe with rice and chorizo.

She's not Spanish, but grew up in Spain up until it was time to go to university.

Agreed on frying in its own fat. Shit, even just fried fat is good!

Thanks on the recipe. We've got a fridge full of chorizo currently so we'll see if this inspires her to branch out a bit.

Yeah im pretty sure that lady isnt Mexican she is just americanized. In fact in a lot of the native towns where i live you wont even find corn tortillas, these people were christianized centuries ago by monks in missions who brought wheat with them.

jeez man, lighten up. Most of the mexican americans who are like that are middle class kids who went to college and are social justice warriors. I know because I met alot of them in college. Stupid yes, but poor no.

I mean poor as in they dont travel much, as if traveling in Mexico was particularly expensive.
 
Not related specifically, but on the subject of messing with tradition.

My main staple is gumbo and I think I'd get in trouble for my recipe in LA.
I use Shrimp, Andouille, and Chicken. I believe its a faux pas to mix seafood and with other meats in traditional gumbo.

You look for spanish chorizo at the deli.
I don't think you can find it around here, I've certainly never seen it. I'd probably have to order it like Cubo de Sangre suggested.

I can't even find a decent Soppressata around here and that might just be the best processed meat product ever conceived.

So im really pretty even on this one.
Has anyone ever tried putting Chorizo on pizza? That might level the playing field.

The best burger I ever had.. had chorizo on fried egg with salsa verde on it.. on a pretzel bun.

It seems to always fall on deaf ears, and the same ones will cry "that's not real mexican food!" lol I know plenty of Mexican-Americans that will claim the same thing, and wouldn't be caught dead eating flour tortillas, for fear of being labeled a sell out or 'coconut'. It's silly, really.

I actually prefer the Mexican chorizo, especially in a nice breakfast taco with flour tortillas. But I'm just a pinche gringo estupido....lol.

Here's the thing though if you grew up in the south west those dishes are just as big part of the food tradition as anything else is. It literally is your food culture; you're not a tourist to it.
 
I have to respectably disagree. However, you are right when it comes to sausage. Turkey, and beef sausage doesn't hold up to Pork sausage.

Anyhow, on the topic of beef. There are fishes that I do prefer and would eat more regularly then cow. Eating cow (red meat) daily is a good way to get that Brock Lesnar disease or die or fuck up your arteries last I checked.

I am not a fan of mixing meats. To me the bacon would take away from the flavor of a really good steak. Although, surely some famous chefs might agree and others disagree. Bacon has a completely different taste that isn't well with beef unless they are mixed together in a sausage casing.
I'm guessing you've never had bacon cheeseburger meatloaf.
It tastes like heaven and I'm not even a bacon fan.
 
i like to make spaghetti and chorizo

cook the chorizo in a pan with a few seasonings/oils until it gets the consistency of marinara, then mix in the spaghetti

almost exactly this too (some hot sandwiches are great w/pepperoni too)
