Off the top of my head...

Weidman Silva I will never cease to make me grin like a Cheshire cat.

Bisping/Rockhold II for just how unexpected the KO was along with Rockhold's well deserved comeuppance.

Fedor/Sylvia because it shut up the UFC tribalists for at least a minute.

Edgar/Maynard III was as storybook as it gets. The fact I was there was pretty awesome too.

Cormier/Henderson was terrific seeing Dan absolutely broken and doing his best Fred Ettish impersonation.

Sakuraba/Gracie I put a stake through the heart of the Gracie mystique which was pretty sweet.

Conor/Aldo despite what a monster McGregor became I thought Aldo was an incredibly boring champ and seeing him face plant nearly right after the bell rung in what was the most consequential fight of all time a very satisfying end to his run.

Khabib/Conor because my God, did McGregor have it coming to him.

Shogun/Machida II Nothing against Lyoto but it was amazing to watch Shogun win so definitely after the controversy of the first fight and being written off just two years prior.

Smith/Coleman because let's face it - NHB was boring as hell for the most part - and seeing Smith pick apart a seemingly unstoppable brute showed that strikers could win at the highest level.

Oliveira/Chandler as a fan of Do Bronx from the beginning of his UFC career and watching his peaks and valleys, this one was really special.

Ronda flipped off opponents after her wins,
refused handshakes

If anyone has ever earned a big old slice of humble pie, it is Ronda.

If anyone has ever earned a big old slice of humble pie, it is Ronda.

The only negative to that experience was someone brought their young teenage daughter to the bar. She kept trying to get up at the bar to watch and she was a rabid fan. The bartenders had to threaten the family multiple times to keep her away from the bar, and she was mouthing off a lot. She wasn't one of the people I saw crying, I think she might of fought anyone at the bar she was so pissed.
