I remember watching this live thinking cowboy just acknowledged defeat

Any other?

Gegard vs Rory. Also someone has to post the photo of Mcgregor when he was taken down in rd4.

Conor, both against khabib and nate..

I'm a conor fan (one of the last i suppose) but the truth is the truth..

Which moment?

I'd say when the 1-2 hit him clean against nate and he realized he was spent, a bit rocked and nate wasn't going anywhere..

Against khabib when khabib got the last takedown..

Not really accepting defeat but just knowing you're about to get well and truly fucked up

RR vs Nunes Comes to mind. Especially, after the first Jab was landed. RR knew she was already done.

Can't forget BJ vs Joe Daddy. He knew he was done after that first Round.
