As the theory goes, the first man and women were genetically perfect, so incest (and the reasons we find it appalling) did not apply. It took several generations (after the fall which introduced sin and imperfection) for the degeneration and imperfections to affect close relatives.

I'm not saying this is what I believe, but that's the theory.
