I have a question. I've been training judo at UFC gym for about 2 weeks. Our instructor has us sparring without teaching us a proper judo stance grip fighting or throw set ups. He taugh us how to do a few throws and break falls for a few classes. Now he has us sparring. He says that we will learn more as we go along. Should I be concerned or should I be comfortable with learning as I go along?

OMG you should be concerned!!!!!!! be careful make sure you don't get hurt out there boo!!!!!!!

It is normal to sparring right away.
Now remember couple of things that will save you.

Do not resist if you get thrown.
Lot of people refuse to get thrown and it is the cause of injuries.
So you lost the match and your opponent is in the process of completing his throw.
Accept the fact and anticipate by doing proper break fall.
Let go of grips and break fall.
Do NOT drag him down with yourself unless you want somebody to land on top of you which is never a great feeling

That's how it is at every place I've trained, and they're normal judo schools.

Perfectly normal. Most judo schools don't even let newbs do any grip fighting, and they generally hate grip fighting, since it means people are sitting around patting their hands and not learning judo. Not to mention you will get hammered with penalties under modern judo rules, which only permit very limited forms of grip fighting.

They changed the rules because competitors were spending all their time grip fighting instead of attempting throws.

As a newb, it takes months to learn even basic competence in taking falls. It's very hard to get newbs to open up their stance/defense and attempt aggressive judo, safely taking and receiving falls. Grip fighting for newbs is usually a pointless distraction from training actual judo.

Ok cool. I just wanted to make sure I wasn't being put in a bad predicament

Na.

From what I understand, the entire point of having beginners spar is to just get them to MOVE. Just move yourself and your partner.

Oh, and fall a lot. I cannot overstate this enough. Fall, fall, fall. Eventually you learn when to resist and when not to resist, and this makes all the difference in terms of preventing injuries. The problem with beginners is that they futilely attempt to stop falling to a well-executed throw by posting with their arms or unnecessarily struggling with their legs and such. Lots of potential injuries from those.
